Recipe: Kimchi Fire Chicken

INGREDIENTS

  • 1 lb chicken, cut into 3/4" cubes

  • half a jar of kimchi (about 1/2 cup, chopped

  • 1 tsp of each: soy sauce, garlic powder, ginger

  • 3 Tb brown sugar

  • 1/2 tsp black pepper

  • 2 Tb neutral oil

  • 4 oz Korean rice cakes (optional)

  • 8 oz mozzarella

  • 2 scallions, sliced for garnish


DIRECTIONS

  1. Combine chicken with kimchi, soy sauce, garlic powder, ginger and sugar. Set aside.

  2. Heat oil and fry rice cakes for about 4 min. Remove rice cakes from pan.

  3. Add chicken mixture and cook, covered, until chicken is done (about 10 min). Add rice cakes halfway thru.

  4. Heat the broiler. Add mozzarella on top of chicken, and put under broiler til cheese is bubbly, about 5-7 minutes.

  5. Serve with rice (if not using rice cakes) and cold beer. Enjoy!
